Peanut butter cookies (dairy free)

When I made a first batch of these, they disappeared almost immediately. They are that good!


  • Ingredients:

  • 150g brown sugar
  • 50g dairy free spread or margarine
  • medium egg 
  • 1tsp honey 
  • 1tsp vanilla 
  • 200g crunchy peanut butter  
  • 100g plain flour 
  • 1tsp bicarbonate of soda 


Method:

1. Preheat the oven to 175C.
2. Cream together the butter, vanilla, honey, peanut butter, egg and sugar.
3. Add the flour, raisins and bicarbonate of soda
6. Using a tablespoon place macaron size heaps on a tray. The cookies don’t expand too much, so you don’t have to place them apart too much. But at the same time, leave some space between them.
7. Put into the center of the oven for 10-12 minutes or until the cookies caught nice caramel colour on top.
