Ingredients:
1tbsp olive oil
1 onion (chopped)
1 leek (halved and sliced)
1 red pepper (chopped)
1 tbsp tomato puree
5-6 chicken breasts (cubed)
1 chorizo sausage (halved and sliced)
2 chicken stock pots (I use Knorr)
1 tsp sweet paprika
1 tsp smoked paprika
1 pot of soya or oat single cream
Method:
1) Heat up the olive oil and fry the onions and chorizo together
2) Add tomato puree and both paprikas and stir in
3) Add leek, peppers, chicken stock. Cover and simmer on low heat until vegetables are slightly softened.
4) Add chicken and add a bit of water. Cover and simmer on low heat until chicken is cooked.
5) Add cream and simmer for further 5 minutes.
I have served this with mash potatoes and broccoli, but it can be served with anything you like.
