This is originally a Jamie Oliver recipe, which I have slightly altered to my liking. So far, it's the best banana cake I have made, and I have made a few!
Ingredients:
175 g dairy-free margarine (melted)
175 g self-raising flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
175 g golden caster sugar
200 g ground almonds
2 large free-range eggs
3 ripe bananas
Handful of dried apricots (chopped)
Same volume of dark chocolate (chopped)
Method:
In a food processor blend the ingredients in the following order, blitz after each group added :
1) Melted margarine / sugar / eggs
2) Bananas
3) Flour / baking powder / cinnamon
4) almonds
Once all is mixed well, take out the blade from the food processor and fold in the apricots and chocolate
Pour into the loaf tin and bake for up to an hour on 170C.
